Thai Red Curry Paste

Not everyone likes cooking from scratch but many of us wish we had the opportunity to do it more but never seem to find the time. This Thai inspired red curry paste is extremely simple and will add a lot of flavour and make you feel in control of your kitchen and your tastebuds.

The ideal thing about this most pastes is it will keep, so you can make it a day or two in advance, such as over the weekend if you have time and make you curry during the week.

This is quite a spicy paste, but you can make it less spicy or just add less to you curry when making it.

Thai red curry paste

Red curry paste ingredients

7 large red chillies
4-5 cloves of garlic
2 shallots
2 stalks of lemongrass
2 tsp roasted coriander seeds
1 tsp chopped coriander
1 tsp turmeric
1 tsp roasted cumin seeds
½ tsp chopped fresh ginger
½ lime juice
½ tsp dried black peppercorns
½ tsp salt
½ tsp shrimp paste

Thai red curry paste- Method

Very simply using a pestle and mortar or a food processor; crush peppercorns, coriander seeds and cumin seeds. Add the remaining ingredients minus the shrimp paste and continue to pound together. When well crushed and mixed add shrimp paste and mix to form a smooth paste.
