As part of the Diamond Jubilee celebration we decided a pork based dish was the order of the day, wanting to marry the traditional English pork sausage with Thai food I created a mixture of Thai flavours to spice things up.
This recipe was extremely quick and easy, the patties can be barbequed or grilled, made into sausage shapes or round and if you want to go one step closer to making them a real Thai dish, serve them on a kebab skewer, meat served on a stick is the height of Thai street dining!
I made these pork patties small and they shrink quite a lot whilst cooking, they are great at a BBQ or would be a delicious starter to any
Thai main dish. Also if you make them bigger, as I intend to do at the weekend they will make mouth watering burgers.
Delightful, homemade Thai patties
Serves: 2-4 people
Preparation time: 20 minutes
Cooking time: 8-10 minutes

Thai style pork patties- ingredients
100g pork mince
2 cloves of garlic, minced
1 red chilli, finely chopped
1 stick of lemongrass, finely chopped
1 tbsp of chopped ginger
½ red onion finely chopped
Pinch of salt and black pepper
Sweet chilli sauce (for dipping)
Thai style pork patties-Method
Very simply chop up all of the ingredients, create a mix and then mix with the pork mince. Divide mix into eight portions, roll and pat into little patties. Then they are ready for cooking.
If cooking on the BBQ these little patties are great to go on first, the fattier meat is great for the coals. If cooking under the grill cook on a medium heat for 8-10 minutes. Ensure meat is cooked completely through before serving.
Serve pork patties with sweet chilli sauce for dipping.
